Blue Sunday Berry Smoothie Bowl

This blueberry based smoothie bowl topped with every berry you can think of (fresh and dried) was inspired by the song ‘Blue Sunday‘ by The Doors. Do you know it? It’s a super simple love song written by the incomparable and super sexy Jim Morrison. It’s moody and it just makes me smile. So do lazy, rare Sunday mornings spent with the fam. Nothing like actually taking time to sit and enjoy a breakfast together with nothing on the agenda….but some good food, good vibes, and vinyl.

So as I twirled around my kitchen, (because that’s really hubs and my favorite dance floor in the whole house) I whipped up this filling smoothie bowl packed with antioxidants and healthy natural fats. I enjoyed it with a huge smile on my face and I hope you do too!

This simple recipe is vegan, gluten-free, keto-friendly, and nut-free if you eliminate the almonds.

2 previously peeled & frozen ripe bananas

(I always purchase extra bananas when I grab a bunch and wait for three or four to brown. I then peel and cut into quarters, and freeze for smoothies)

1/2 c frozen organic blueberries

1/4 c organic almond or coconut milk

1/4 c organic spinach

1/4 c organic kale

Blend in a food processor until smooth (About a minute and a half)

*If you don’t have a food processor, which is the one kitchen item I CANNOT live without, check out this one here! Mashed anything, homemade hummus, sauces of all kinds! I use mine daily! No joke!

Top with

1/3 c blueberries

1/3 c raspberries

1/3 c blackberries

2 big strawberries sliced

1 tablespoon unsweetened coconut

Sliced raw almonds

1Tablespoon goji berries

1 Tablespoon dried mulberries

Sprinkled with hemp hearts & chia seeds

If you’re a regular reader or follow my vegan page, The Turquoise Table on Instagram, you know I get most of my toppings in the bulk section at Whole Foods. It’s a great way to buy and try out smaller amounts of otherwise somewhat expensive nuts and such. They are mostly organic and all labeled clearly. Plus, it’s really fun! I look forward to it so much! So do the kiddos!! It’s a great way to get fickle kids to try small portions of many different items! All healthy too!

Rock on,

(James Douglas Morrison)

“I found my own true love on a blue Sunday

She looked at me and told me

I was the only one in the world

Now I have found my girl

My girl awaits for me in tender time

My girl is mine, she is the world.

She is my girl

La, la, la, la”
