Confession: I’ve been eating my weight in kale since being quarantined! I’ve upped the leafy greens, green smoothies, detoxifying epsom salt baths, fresh pressed juices, elderberry, vitamins and hot tea with fresh ginger, lemon and local honey. (NJ Real Housewife, Margaret Jospeh, even adds orange juice to that tea combo. I’ve never thought about warm OJ in tea before, but I tried it and LOVED it! I thought the added vitamin C would also do me some good!)
I’m happy to say I’ve managed to kick whatever nasty bug and fever I’ve had for over a week since we’ve been told to say inside. I’m not sure adding these extra nutrients did the trick completely, but I know it surely help! I’ve always been a believer in the Hippocrates theory, “Let Food Be Thy Medicine”.
I figured I would share my favorite, simple, go-to kale salad I’ve been eating tons of lately while trying my best to fight off sickness. I thought we could all use a few more ideas on how to stay healthy and keep our immune systems at their peak right now!
This salad is PACKED full of healthy fats for heart and brain power! It’s tangy, has a nice bit of crunch and it’s full of flavor. Enjoy!
• 2 handfuls of kale (I prefer dinosaur aka lacinato)
• 1 whole avocado to massage into the kale
* massaging your kale for a few minutes helps break down the fibers and make the greens taste less bitter!
If you’re not normally a fan of kale, doing this can be a game changer!
• 1 tbs good olive oil
*I only use imported Greek. I find it to be the tastiest and purist. When I’m not heating the oil, I like to make sure the quality is absolutely top notch.
• 2 tbs hemp hearts
• 1/2 c fresh squeezed lemon juice
• cracked black pepper to taste
• 1/4 c crushed pistachios
(My kiddos love shelling and smashing these for me!)
• teaspoon of crushed red pepper
Some may like to:
• top it with grilled salmon
• add freshly shaved Parmesan or crumbled feta
• eliminate the spice
To me, this is perfect just the way it is, but feel free to play!
